Tasty Beef and Vegetable Soup Recipe

Almost nothing is better than a savory soup recipe on a snowy day. I threw together this quick tasty vegetable soup recipe yesterday, while this current snowstorm was underway. It was quite yummy if I do say so myself. It was also pretty easy to make. If you are in the mood for a bowl of steaming soup, this recipe will quickly become your go-to.

Ingredients Needed to Make this Tasty Beef and Vegetable Soup Recipe

For time and cost, I used frozen bags of vegetables. Of course, fresh vegetables are a great go-to, but for those times you are in a pinch or the vegetables are out of season, grabbing frozen bags works just as well.

Additionally, this recipe includes beef, but if you are looking for normal vegetable soup, just omit the hamburger.

  • 1 bag of frozen corn
  • 1 bag of frozen peas
  • 1 bag of frozen green beans
  • 1 bag of frozen carrots and peas (if you can find a bag of just carrots that will work too.)
  • Onion
  • 2-3 cartons of beef broth (you can also add water if you run out of beef broth.)
  • 1-2 pounds of Hamburger (this depends on how much meat you like to have in your soup.
  • Salt
  • Pepper
  • Garlic powder
  • Onion powder (if you don’t have an onion.)

How to Make Beef and Vegetable Soup

Before you begin making your beef and vegetable soup there are a few notes I’d like to add.

The amount of hamburger you use will be dependent on how large your family is and how much they like hamburger. If you like your soup to be soupier, use more beef broth or water. (or less vegetables.) I used 4 bags of vegetables because my family is large and I wanted some to freeze for later. However, it was less soupy. I am okay with that, because I prefer more vegetables in my soup. Just play around with the amount and see what works for you and your family.

Also, I don’t measure out seasoning, I just throw it in the pot. You can also be choosy with the seasoning you use. I”m not type A at all, so feel free to play around with your recipe until it is perfect for you!

Now, on to how to make this Recipe!

Step 1

Open all the bags of veggies and toss them into your pot. I really just wanted an excuse to use my new Dutch oven. (and it was amazing.)

Step 2

Mix the vegetables together until you are satisfied.

Step 3

Okay, actually this was the first step, but that’s okay. You can really do this whenever you want to. Brown the hamburger until it is done. Then add it to the vegetables in the pot.

Step 4

Add the beef broth to the vegetables.

Step 5

Toss in your seasonings and mix until everything is combined.

Step 6

Cook on medium-low for 45 minutes to an hour. The food needs enough time to absorb all that seasoningly goodness.

Step 7

Dish out and serve with these delicious cheesy drop biscuits!
