Every Christmas I make the crockpot breakfast casserole. My family devours it. This past year I forgot to grab the ingredients to make this special dish, and my oldest daughter was devastated. Thankfully, my mom had the ingredients on hand. So, late Christmas Eve I ran over to her house and the morning was saved. Since my family loves the crockpot version so much, I decided to add this sausage and potato breakfast casserole to our January meal plan.
Yesterday was my birthday, so I didn’t make this one. My husband did, and it was absolutely delicious. If your family is a meat and potato type family, then this recipe is a must try!

Ingredients to Make Sausage and Potato Breakfast Casserole
This casserole dish is actually quite simple to make, and it has all the best hearty breakfast ingredients. To make this dish, you will need the following ingredients:
- 1 pound of ground breakfast sausage
- 1 bag of hashbrown potatoes
- 12 large eggs
- Cheddar cheese
- Salt
- Pepper
How to Make Sausage and Potato Breakfast Casserole
Before preparing the dish, preheat the oven to 400 degrees Fahrenheit. While the oven is preheating, brown the sausage over medium heat on the stove.
Once the sausage is fully cooked, it is time to add all the ingredients together!
Crack the 12 eggs and stir them together, breaking the yolk. Like you would if you were making scrambled eggs. Next add the potatoes, eggs, cheddar cheese, sausage, and seasoning together into a bowl.
Mix the ingredients together until they are fully combined.
Pour the breakfast mixture into a greased baking dish. Cover the dish with aluminum foil (to keep the top from burning) and place into the oven. Cook for 20-25 minutes.
Check the casserole and remove the aluminum foil. Place the casserole back into the oven for 10-15 more minutes until the top is slightly browned and the egg mixture is set.
Remove from the oven and enjoy!
